With the bank holiday weekend and a house all for myself, i managed to do some baking in between the chores i had in hand. And what better to bake this summer but cupcakes? I wanted to play with more different colours however, i was limited to just one piping bag... i couldn't find the other ones that i bought previously. I must have hidden them somewhere very safe...!
I am also a novice when it comes to cupcakes and icing but it's a new challenge i am more than happy to take on so expect more cupcakes to be showcased here while i insanely feed my greedy appetite for them. I warn you, this is just the beginning... ;)
For these cupcakes, i used a box of Gluten Free Chocolate Cake Mix and a box of Whipped Icing Mix that i bought from one of the Farmers Shop here. To be honest, i have never used them before and this was the first time ever. I was really impressed how well they turned out especially the icing! It had a smooth and light velvety texture and not as heavy as buttercream. Everyone thought it even had a marshmallow-y taste to it [must've been the Guar Gum]. Unfortunately, as i went to the same shop today to get some more, i was disappointed to find that they no longer have them in stock..!
Chocolate Cupcakes with Vanilla Icing
for the cupcakes
1 box of chocolate cake mix
175g [6oz] margarine
3 eggs
cupcake liners
for the icing
1 box of whipped icing mix
food colouring
1 cup of cold water
Preheat the oven to 160c [fan assisted] and line a 12 hole muffin tin.
In a bowl, melt the margarine. Add 3 eggs, melted margarine and the cake mix to the KitchenAid metal bowl and whisk for about 5 mins on medium speed.
Spoon into the cupcake liners filling 2/3 full. Bake in the middle of the oven for about 20-25 mins.
Remove from the oven and let cool on a wire rack.
for the icing...
Fill a pitcher with half amount of water and place 3 cubes of ice. Once the ice have melted and the water is cold, measure 1 cup into a mixer bowl and add the icing mix.
Using a KitchenAid, mix in low speed for 1 minute. Scrape the sides of bowl with spatula and mix again on medium speed for 4-6 minutes or until icing forms a stiff peaks.
Using a piping bag, decorate your cupcakes.
You can be as creative as you like when it comes to decorating your cupcakes. Experimenting with colours and toppings is so much fun!
